Today’s keeping it simple all day, everyday recipes are both yummy, quick, and kid-friendly. I love to make the cinnamon rolls for a Sunday morning breakfast and the broccoli is the best as a side dish for lunch or supper. Your kids will love these recipes. These are no-fuss and so easy, you are going to want to make these over and over.

I have so many great memories growing up in the kitchen with my grandma and my mom. When we visited our grandma, she would make all of our favorite dishes. Grandma loved to try new recipes so since this was before the copy machine days, she would copy recipes by hand from the newspaper. Or cut them out of the newspaper. Wow, we are so far ahead of that now. We can search and finding anything we need on the internet. Through this time at home due to the Covid-19, I am keeping it simple all day, every day. I pray that you are making memories with your family and making the best of the time that you have together because life is short.

HOW DO YOU MAKE THE SUNDAY MORNING CINNAMON ROLLS?

1. Preheat the oven to 375 degrees. Spray a round cake pan with non-stick spray.

2. Place the cinnamon rolls in the non-stick round cake pan.

3. Chop up one apple and peach. Sprinkle the chopped apple and peach over the rolls. Sprinkle a teaspoon of cinnamon and sugar mix over the top of the rolls and fruit.

4. Cook the cinnamon rolls for 20 minutes. Check to make sure they are done in the middle after 20 minutes. Depending on the size of the pan, you may need to cook them a little longer unless you prefer doughy cinnamon rolls.

5. Enjoy!

INGREDIENTS YOU’LL NEED FOR THE SKILLET BROCCOLI

  • 2 cups fresh broccoli
  • 2 Tablespoons olive oil
  • Salt, pepper, and garlic powder to taste
  • 1 Tablespoon parmesan cheese
  • 2 Tablespoons Italian breadcrumbs

HOW DO YOU MAKE THE SKILLET BROCCOLI?

1. Use a non-stick skillet. Add the olive oil to the pan.

2. Cut up the broccoli and add to the pan with the olive oil.

3. Season the broccoli with the salt, pepper, garlic powder and sautéed for around 5 minutes.

4. Sprinkle the Italian breadcrumbs over the broccoli and sautéed for another 5 minutes.

5. Lastly sprinkle some the parmesan cheese on top of the broccoli. Cook for another minute or so until the cheese is melted.

6. Serve as a side for lunch or supper.

Creamy Dreamy Chocolate Rice Pudding

Creamy Dreamy Chocolate Rice Pudding is a fantastic and easy kid-friendly recipe to eat at breakfast or for dessert. I like to eat rice pudding for dessert, but you can make it for breakfast. Your kids will love this recipe. If you prefer to make regular rice pudding, you can leave out the chocolate and add in cinnamon and raisins. Either way, you are going to love it!

Growing up, my mom would make us rice for breakfast. She would cook the rice and add in a little butter, milk, and a teaspoon of sugar. Rice for breakfast may be a little old fashioned and out of style. However, there are so many things that aren’t out of style like the memories we hold dear to our hearts. I hope that you are making memories with your family. Make the best of the time that you have together because life is short.

INGREDIENTS YOU’LL NEED

  • Milk
  • Jasmin Rice
  • Salt
  • Egg
  • Brown Sugar
  • Vanilla Extract
  • Cinnamon
  • Chocolate Chips or Raisins

HOW DO YOU MAKE THE CREAMY DREAMY RICE PUDDING?

1. In a medium saucepan stir together the rice, milk, and a dash of salt. Heat to a boil over high heat. Keep stirring because the rice will stick or boil over. Once it reaches a boil, reduce the heat to a simmer and cook for about 20 minutes or until the rice is tender.

2. In a small bowl stir together the egg and brown sugar. When the rice is tender, use a half a cup of the mixture and add one teaspoon of the mixture at a time to the egg and brown sugar to temper the mixture. Please be careful to not scramble your egg. Add the brown sugar/egg mixture to the rice mixture. Add in vanilla and cinnamon. Cook until thickened which is about 5 minutes. (160 degrees F) You can add in the chocolate chips. If you prefer raisins, please wait to add the raisins in when you have completed the cooking process.

3. Serve warm or cold.

Without a doubt, I have been in a place where I felt like a lost traveler. Are you feeling lost amongst all the things going on in the world? Look to God no matter what is going on around you. God will fill your life with good things.

Caramel Streusel Apple Muffins are a tasty kid-friendly treat not only for breakfast but for any time of the day. The apples and caramel make this a yummy delicious treat. You can add in other fruit such as peaches which might be on my next to-do for this recipe. Peaches are in season right now so give it a try and let me know what you think. Caramel Apple Streusel Muffins

Love Apples, you’re gonna love these!

For Father’s Day, our kids came to visit. This is the first time they have been here since the Covid-19. My granddaughter, Landry loves to bake so we made these Caramel Streusel Apple Muffins together.

Great for the fall too!

INGREDIENTS YOU’LL NEED

  • All-purpose flour
  • Brown sugar
  • Cane sugar
  • Cinnamon
  • Butter
  • Baking powder
  • Baking soda
  • Apple pie spice
  • Eggs
  • Vanilla
  • Apples
  • Caramel chips

HOW DO YOU MAKE THE CARAMEL STREUSEL APPLE MUFFINS?

Heat the oven to 450 degrees. Line 12 muffin tins with paper liners

Make the streusel:

Stir together the flour, brown sugar, cane sugar, and cinnamon. Stir in the melted butter until incorporated, then use your fingers to form thick crumbs. Set aside.

Make the muffins:

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and apple pie spice. Using a mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Turn the mixer to low and add the eggs one at a time. Then add the vanilla. Add the flour mixture, chopped apples, and caramel chips.

Use a cookie scoop to divide the batter between the prepared muffin cups. Top with the streusel topping and press the crumbs into the batter. Bake for 5 minutes at 450 degrees then turn the oven to 350 degrees and bake for additional 15 minutes.
