Today on Tasty Tuesday’s Tips and Recipes I am sharing a Sweet Strawberry Roll recipe that I made for Mother’s Day. One of my favorites for breakfast is cinnamon rolls. These probably rank a close second to my cinnamon rolls. If you love strawberries, you will love these. I used strawberry jam for this recipe because that is what I had on hand. You can use fresh strawberries as well.
This Sweet Strawberry Roll recipe is a process and takes a while to make. After baking, wrap them up in individual packaging and freeze for later. I highly recommend trying these while we are in the strawberry season. However, you can always use strawberry jam as I did, and they will turn out great! Are you getting hungry?
INGREDIENTS YOU’LL NEED:

HOW DO YOU MAKE SWEET STRAWBERRY ROLLS?
1. In a saucepan over medium heat, add milk and cook gently until foamy bubbles form on the edges. (do not boil)
2. Remove from the heat and stir in the sugar and butter.
3. Allow to cool to lukewarm and add the instant yeast.
4. Stir in the egg.
5. In the bowl of a standing mixer, add 2 ½ cups of flour and salt to combine.
6. If you have it, use a dough hook attachment, add the liquid and mix until the dough is well kneaded, about 3 minutes.
7. Drizzle olive oil on the dough so it does not stick to the bowl. Let rise for 1-2 hours until doubles in size.
8. Once the dough has risen, prepare the strawberries or just use strawberry jam.
9. Roll the dough on a lightly floured surface to make a rectangle that is 1 to 2 inches thick.
10. Spread the strawberries mixture or the strawberry jam to the edges. Roll the dough. Using a serrated knife, slice through the rolls to make 1 ½ to 2-inch pieces.
11. Bake at 350 for 25-35 minutes or until golden and baked through.
12. Remove from the oven and allow to cool for a few minutes before frosting.
Frosting
1. In a large bowl, beat the butter using a hand mixer until smooth, Add the sugar, vanilla, salt, vanilla, and strawberry jam. Mix until smooth and spread on the rolls.
Note: If you are freezing the rolls, do not frost before freezing.

I like using my pampered chef mini loaf pan. It cuts the cooking time in half and mini loaves are easy to freeze. I can thaw out one at a time. I used butter in this recipe, but I think I might try using oil next time. However, the bananas and the yogurt make them pretty moist.

First, preheat oven to 350 degrees Fahrenheit. Spray the pan lightly with non-stick baking spray.
Then, combine flour, cocoa powder, baking soda, baking powder in a large bowl and set aside.
Next, beat butter and sugars until fluffy. Stir in eggs, vanilla, chocolate chips, walnuts, and bananas. Add in the dry mixture. Stir to combine.
Last pour the mixture into either the mini loaf or regular loaf pan. If you are using the mini loaf, cook for 28 minutes. Cook for 40-50 minutes in the regular size loaf pan.
