Caramel Streusel Apple Muffins are a tasty kid-friendly treat not only for breakfast but for any time of the day. The apples and caramel make this a yummy delicious treat. You can add in other fruit such as peaches which might be on my next to-do for this recipe. Peaches are in season right now so give it a try and let me know what you think. For Father’s Day, our kids came to visit. This is the first time they have been here since the Covid-19. My granddaughter, Landry loves to bake so we made these Caramel Streusel Apple Muffins together.
INGREDIENTS YOU’LL NEED

HOW DO YOU MAKE THE CARAMEL STREUSEL APPLE MUFFINS?
Heat the oven to 450 degrees. Line 12 muffin tins with paper liners
Make the streusel:
Stir together the flour, brown sugar, cane sugar, and cinnamon. Stir in the melted butter until incorporated, then use your fingers to form thick crumbs. Set aside.
Make the muffins:
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and apple pie spice. Using a mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Turn the mixer to low and add the eggs one at a time. Then add the vanilla. Add the flour mixture, chopped apples, and caramel chips.
Use a cookie scoop to divide the batter between the prepared muffin cups. Top with the streusel topping and press the crumbs into the batter. Bake for 5 minutes at 450 degrees then turn the oven to 350 degrees and bake for additional 15 minutes.
